Laboratory for Sensory Analysis of Agri-Food Products
The Laboratory for Sensory Analysis of Agri-Food Products is a fully equipped, unique, and independent organizational unit of the University of Zagreb, Faculty of Agriculture. It was established within the framework of the project "Center for Food Safety and Quality" (KK.01.1.02.004), implemented by the Teaching Institute of Public Health “Dr. Andrija Štampar”, in cooperation with the Faculty of Agriculture as a partner, and co-financed by the European Union from the European Regional Development Fund.
Sensory (organoleptic) analyses are based on the use of human senses to assess food characteristics such as appearance, smell, taste, texture, suitability, acceptability, and others. Most of the analyses are conducted by previously trained analysts, and they are performed under standardized and controlled working conditions. The laboratory is equipped with 10 individual booths—work units equipped with tablets and software support for data collection and processing, as well as convenient sinks and faucets. In addition to the laboratory space, there is a modern kitchen available for the preparation of food and samples for analysis. To ensure high-quality analyses, the laboratory uses advanced sensory evaluation methods, including discrimination tests, descriptive analyses, and acceptance and preference tests. The laboratory is continuously developing methods and instruments to improve analytical processes, ensuring precision and reliability of results.
The laboratory is oriented towards scientific research and collaboration with agricultural and food product manufacturers and processors who wish to approach the market in a well-considered manner. Additionally, the laboratory offers consulting services with experts and their engagement in conducting specific sensory analyses, as well as organizing professional and consumer education. It is also worth highlighting the research on consumer attitudes and habits, which serves as a valuable source of information for decision-making regarding product development or marketing strategies.
