Production and Processing of Meat

Study Programme Coordinator: Assoc. Prof. Ivan Vnučec, PhD


The student will get basic ideas of growth phenomenon, meat biochemistry, various methods, breeding system and the use of domestic animals in meat production and processing. He/she will get knowledge on significance of genotypes and ecological factors in meat production, quality and processing. Depending on the group of elective modules a student may be made qualified for managing technologically demanding processes in the area of meat production and processing or prepared for scientific progress through post-graduate studies. The MSc degree holder will complete an experimental professional or scientific work.

Qualifications attained: manager of production on a farm and/or a technologist, a craftsman plant (a slaughterhouse, ham-smoking plants, plants for production of fermented meat products, etc), professional manager in counselling services, a professional manager of programmes in associations of animal breeders, a technologist in primary meat production and processing, a teacher in vocational secondary and high schools, an associate in trade and marketing of agricultural equipment and products, a media worker and journalist in the sector agriculture - food.


Based on current scientific knowledge and contemporary teaching process, students will be able to acquire generic and field specific competencies that are needed to achieve sustainable development goals and to work in different fields of animal sciences and production and processing of meat. The objective is to enable students to participate in research in the field of sustainable and environmentally friendly animal production as well as in production and processing of meat as one of the most important product of animal origin, conducted at higher education institutions and scientific institutes and to continue education at the postgraduate study level. Furthermore, students are trained for various jobs in the field of animal science within a large number of professional and scientific institutions, such as Ministry of Agriculture, Croatian Extension Service and other state agencies and within the farms and meat processors (meat industry). Moreover, the objective is to train students and provide opportunity to start self-employment on their own family farms that will be successful on the livestock or meat production market.

Learning outcomes

  1. Identify the position of agriculture in general, especially in the field of livestock and production of animal origin food as the primary human activity and basis of agricultural profession in a broader sense
  2. Use the acquired theoretical and practical learning abilities in the acquisition of new knowledge in the field of animal science
  3. Recognize the important developments in the field of animal breeding and production of animal products
  4. Apply acquired knowledge and skills to perform the tasks in the organization and administration of organizations and agencies in the field of livestock and animal products production
  5. Participate in the design of various facilities in the production of meat and meat products
  6. Analyse specific problems in practice and solve them, in new situations, on the basis of acquired knowledge and skills
  7. Evaluate the conclusions of scientific and technical papers in the field of production and processing of meat
  8. Present the modern trends in the field of animal breeding and production of animal products
  9. Participate in research activities in their areas with laboratory and field work
  10. Use modern information and communication technology in daily work
  11. Lead programs in the field of animal production and traffic of livestock products and equipment in livestock production
  12. Independently collect data, analyse and statistically process it, and participate in the writing of scientific and professional papers
  13. Organize and manage the processes of animal production and production of animal products
  14. Conduct practical and theoretical education in vocational schools and polytechnics
  15. Attain the level of knowledge and skills for continuing education in the field of animal and related sciences
