Abstract
The aim of our research is to develop an analytical approach for quantitation of 4- mercapto-4-methylpentan-2-one (4-MMP), 3-mercapto-hexan-1-ol (3-MH) and 3- mercaptohexyl-acetate (3-MHA) in wines based on stable isotope dilution assay (SIDA) in combination with two-dimensional GC-MS analysis and apply the approach to evaluate varietal thiols in Croatian and Austrian wines. These analyses would cover Sauvignon blanc, Welschriesling and Riesling grape varieties. Selection of these varieties is made based on the marked popularity of these wines in Croatia and Austria. Apart from the definition of thiol concentrations presented in different types of Sauvignon blanc, Welschriesling and Riesling wines, from young up to aged ones and also predicate wines one of main target would also be to define the influence of vineyard site, year of production and wine technology used on volatile thiol compounds concentrations.
