Sažetak:
Istarsko govedo je autohtona pasmina koja je krajem XX. stoljeća biološki bila vrlo ugrožena. Gospodarska reafirmacija istarskog goveda usmjerena je na vrednovanje kakvoće mesa, što iziskuje upoznavanje fizikalno-kemijskih promjena u mesu tijekom njegova podvrgavanja postupku „zrenja“. Postavljene su hipoteze da trajanje i način podvrgavanja mesa postupku zrenja značajno utječu na njegove fizikalno-kemijske karakteristike, a postavljenim ciljevima iste će biti provjerene. Istraživanje će biti provedeno na trideset junadi istarskog goveda, uz petotjedno podvrgavanje njihovog mesa postupku „suhog i mokrog zrenja“ i utvrđivanje promjena fizikalnih karakteristika i kemijskog sastava mesa tijekom pokusnog razdoblja. Utvrdit će se dinamika lipolitičkih i proteolitičkih procesa u mesu istarskog goveda podvrgnutom mokrom i suhom zrenju.
Summary:
Istrian cattle represent an autochthonous breed which was biologically highly endangered at the end of the XX century. The Istrian cattle economic reaffirmation is focused on the evaluation of meat quality, which requires knowledge of the physical and chemical changes of the meat during the "aging" process. The hypothesis established is that the duration and type of beef aging significantly influence the physical characteristics and chemical composition of the meat, which will be verified through the established objectives. For the study, thirty bulls of Istrian cattle exposing the beef to a five-week process of dry and wet aging, and the changes in physical characteristics and chemical composition of the meat during the experimental period are determined. The dynamics of lipolytic and proteolytic processes in Istrian beef subjected to wet and dry aging will be determined.
